Asparagus soup

Ingredients:

500 grams of asparagus
1 liter of water
250 milliliters of whipped cream
125 grams of flour
2 tablespoons tesmi
1 onion
Pepper
Salty
Chives
Chervil
Nutmeg

Preparation method:

Peel the asparagus. Boil them for 3 minutes with salt and the peels. Then let them rest for 10 minutes in the water.

Put 2 tablespoons of Tesmi in a saucepan. Chop 1 onion finely. Add the onion when the butter has melted and let it sit for 5 minutes.

Take the asparagus out of the pan. Take a measuring cup and a sieve. Pour the asparagus liquid into the measuring cup and sieve out the peels. Add the flour to the Tesmi and onion. Stir until a nice roux. Add one third of the asparagus liquid to the roux and mix with a whisk until a smooth mixture. Let this stand for 15 minutes. Then add the rest of the liquid and the whipped cream. Mix well with the whisk.

Cut the asparagus into small pieces. Add half to the soup. Then put the hand blender on it for a while. Until it starts to foam a little. Season with pepper, salt and nutmeg.

Divide the rest of the asparagus pieces over the plates. Add the soup and garnish with chives and chervil
