Eritrean Kitcha fit fit

Ingredients:

•⁠ ⁠3 tablespoons Tesmi/Niter Kibbeh/Ghee
•⁠ ⁠1 or 2 tablespoons Berbere
•⁠ ⁠500 grams of patent flour
•⁠ ⁠2 teaspoons salt
•⁠ ⁠2 tomatoes
•⁠ ⁠2 onions
•⁠ ⁠2 glasses of water of 250 ml

Toppings:
•⁠ ⁠Yogurt or vanilla yogurt
•⁠ ⁠Green Pepper
•⁠ ⁠Feta cheese

Materials:

  • 2 bowls
  • frying pan
  • cutting board
  • Pan

Preparation method:

Step 1: Making Kitcha (Kitcha is a type of bread)
Mix the flour with the water. Knead the flour with water into a dough that resembles a pancake mix. The dough should be slightly thicker than a pancake mix. Make sure there are no lumps left.
Heat a frying pan and grease it with (olive) oil. Then pour a layer of dough (slightly thicker than a pancake layer) in the pan and fry it on both sides. Make sure the outside is hard and the inside soft. About 2/3 minutes per side.
Do this until the dough is gone. You can make about 4 to 6 kitchas. Depends on the thickness of your Kitcha.

Step 2: Prepare mix
•⁠ ⁠Tear the kitchas by hand into small pieces about the size of a 2 euro coin.
•⁠ ⁠Cut the tomato and onion into wedges/strips
•⁠ ⁠Cut green pepper into pieces
•⁠ ⁠Prepare Berbere
•⁠ ⁠Prepare Tesmi

Step 3: Make Kitcha Fit-Fit
•⁠ ⁠place a pan on medium heat
•⁠ ⁠Throw the tesmi into the pan and wait until it is completely liquid.
•⁠ ⁠Once it is liquid, throw the onion in the pan. After about 2 minutes, the onions will start to get some color.
•⁠ ⁠After 2 minutes, throw in the tomatoes. Stir them with the onion in the pan with Tesmi.
•⁠ ⁠After 2 minutes, add the Berbere to the pan and stir it with the onion and tomato in the pan.
•⁠ ⁠After 2 minutes, throw all the Kitcha pieces into the pan and stir everything together.
•⁠ ⁠Stir until the dough gets the color of the Berbere.

Step 4: Scooping & Toppings
•⁠ ⁠Preferably scoop the Kitcha into a deep plate
•⁠ ⁠A layer of Yogurt or Vanilla Yogurt on the side
•⁠ ⁠Toppings: sprinkle green pepper and feta cheese over your plate.
