Mexican Wraps
4 wraps
Ingredients:

- 300-400g chicken cubes
- 1 bag Mexican stir-fry vegetables (approx. 400g)
- 1 can of corn (approx. 150g)
- 1 onion, chopped
- 2 tbsp Tesmi
- 4 tortilla wraps
- Grated cheese, to taste
- 4-6 tbsp taco sauce (mild, medium or spicy to your preference)
- Salt & pepper, to taste
- Optional: chili powder, cumin, coriander or lime juice, guacamole, sour cream.

- Knife
Preparation method:
- Heat 1 tablespoon of Tesmi in a large pan over medium heat. Add the chicken and cook for 6–8 minutes until golden brown. Season with salt, pepper and a little chili powder if desired. Remove the chicken from the pan and set aside.
- Melt another tablespoon of Tesmi in the same pan. Sauté the onion for 2–3 minutes. Add the Mexican vegetables and stir-fry for 4–5 minutes until al dente. Then add the corn and fry briefly.
- Return the chicken to the pan and add the taco sauce. Stir well to combine the sauce with the chicken and vegetables. Simmer gently for another 2-3 minutes.
- Briefly warm the tortillas. Spoon the mixture into the middle of each wrap. Sprinkle some grated cheese over it and fold the wraps closed.
- Serve immediately, with extra taco sauce, guacamole, sour cream or lime juice if desired.

For extra crunch: fry the filled wraps in a dry frying pan until the outside is golden brown and the cheese has melted nicely.
