Quiche with salmon, shrimp, kefir and spinach

Ingredients:

1 onion
4 cloves of garlic
1 leek
2 spring onions
200 grams of spinach (cubed)
1.5 tablespoons Tesmi
100 grams of cocktail shrimp
250 grams of salmon
100 grams of grated cheese
5 eggs
350 ml kefir
Salt and pepper
Puff pastry or quiche dough

Preparation method:

Preheat the oven to 200 degrees top and bottom heat.

Finely chop the garlic and onion. Sauté them in a wok with 1 tablespoon of Tesmi. When the onion begins to soften, add the salmon. Melt the spinach cubes in a pan, making sure to thoroughly boil off the excess water.

Next, slice the leek and spring onions into thin rings. When the salmon is cooked, add the shrimp and fry briefly.

Crack the eggs into a mixing bowl and whisk well. Add the kefir, salt, and pepper and mix well. Also add a little grated cheese to this mixture.

Line a tart pan with parchment paper. Spread the puff pastry or quiche dough over it. Prick the base with a fork to create a few small dots. Melt half a tablespoon of Tesmi in a pan. Brush the pastry with the Tesmi. Then add some of the leek, spinach, and spring onions to the quiche. Then add a layer of salmon and shrimp. Top this with some of the egg mixture. Repeat until all the ingredients are used. Top the quiche with a generous layer of cheese.

Bake the quiche for 35 minutes. Let it cool completely before slicing.
