Carrot cake muffins

10 muffins

Ingredients:

  • 3 large carrots
  • 3 cups oatmeal
  • 10 pitted dates
  • 2 tablespoons Tesmi
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Handful of pecan nuts

Materials:

  • Oven
  • Grate
  • Come
  • Fork or whisk
  • Hand blender or blender
  • Muffin tin

Preparation method:

  • Preheat the oven to 200 degrees (top and bottom heat).
  • Grate the carrots.
  • Place all remaining ingredients, except the pecans, in a blender.
  • Take a knife and chop the pecans into small pieces.
  • Mix the batter with the carrots well.
  • Grease the muffin tin. Divide the mixture over the muffin tin and add the pecans on top of the mixture.
  • Place the muffins in the oven for 20 minutes.
